I love being married to this man. He would do just about anything for me. I say "just about" because there is only one thing he won't do for me. Any guesses? Hint: It occurs during picture taking. That's right. He won't smile for me when the camera is pointed at him. His mama said he has always been like that. I thought I could break him but I was wrong. I will keep t-r-y-i-n-g and I will love him regardless because he's my prince. Thanks for all the little and big things you do for me. They never go unnoticed. I love you! Happy 1-2-3-4-5-6-7-8-9-10-11-12-13-14-15-16-17th Anniversary. I look forward to many, many more years with you.

Every Tuesday night we eat a chicken dish for dinner. This recipe was a hit with my family so I thought I'd pass it on. 6 skinless, boneless chicken breast, diced into bite size 3 tbsp cornstarch 6 tsp sesame oil 4 green onions, chopped 4 garlic cloves, minced 3 tsp fresh ginger, grated 1 tsp crushed red pepper flakes (more if you like it spicy) 9 tbsp soy sauce 9 tbsp seasoned rice vinegar 3 tsp sugar 1 cup roasted peanuts Directions: Prepare rice. Combine chicken and cornstarch in a bowl and toss until evenly coated. Combine the vinegar, soy sauce and sugar in another bowl and set aside for later. Heat wok with sesame oil over medium high heat. Once the pan is hot add the chicken and stir fry until no longer pink inside. Remove the chicken from the pan and set aside. Add garlic, ginger, red pepper and green onions. Stir fry 30 sec. Add soy sauce and vinegar mixture to pan with chicken and peanuts. Heat thoroughly. Serve over rice and garnish with green onions. Enjoy!

Did anyone want to throw the covers back over their head when waking up this morning? I did. Our spring break went way too fast this year. I let our once rigid routine fade away into a distant memory. It was nice. I enjoyed staying up way too late eating popcorn and watching movies with the kids. It was nice to trade in the homework for long bike rides and walks along the beach (another post). I suppose it's time to get back to the ol ' routine. Darn it! Before the kids left for break Britley's first grade class got to go on a field trip to the zoo. Britley begged me to volunteer as one of the chaperons. After looking into her pleading eyes I actually considered it but then came to my senses. I've tried that in the past (her older siblings) and I always end up with a pounding headache from the (what seems to be an eternal) bus ride home. There's always a kid or two or three or four with high pitched, l-o-u-d voices. I know. I'm pathetic. I compromised h

spirit week

The girls really got into spirit week this year. They carefully planned out what they were going to wear and tried to match each other the best they could. They were up at the crack of dawn everyday bursting with excitement to showcase what they were going to wear. Hawaiian Day Twin Day Nerd Day Team Day The boys decided to join in. Crazy Hair Day You guys rocked spirit Week this year!

Just three short days after our last trip we were back to traveling. I found myself once again at an airport. Pushing a wheelchair. This time however we were traveling for pleasure and luckily there were no difficult encounters at the airport. We were off to visit some dear friends of ours. These are the kind of friends that... . Even though you haven't seen them in months or sometimes years you pick up right where you left off. . You can trust them to watch your kids when you leave town(did this about 9 yrs. ago) Our kids thought it was the best weekend ever! . Are a positive example to follow. . Have "good energy" . Have a loving and secure home, filled with love, laughter and affection. For all of these reasons and many more it is no surprise that this couple's profile was chosen twice to be adoptive parents. They have two beautiful, sweet boys. Our trip to Salt Lake involved being present to show our love and support for this family's third addition. Hear
