just peachy
After ordering Utah peaches my sister and I peeled,
cut, and pitted peaches and more peaches and more
peaches. So what to do with all these frozen peaches?
Here are some favorites...
Georgia Peach Bread
1 1/2 c. granulated sugar
1/2 c. shortening
2 eggs
2 1/4 c. pureed peaches
2 c. all-purpose flour
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp.salt
1 1/2 tsp. vanilla
1 c. chopped pecans or walnuts
Preparation:In a large mixing bowl, cream sugar and shortening until light. Add eggs and beat well. Add peach puree and dry ingredients. Blend well. Stir in vanilla and chopped pecans and until blended. Pour into two greased and floured 9x5-inch loaf pans. Bake at 325° for 55 minutes to 1 hour, or until a wooden pick or cake tester inserted in center comes out clean. Let bread cool for 5 minutes before removing from pan. Cool completely on wire racks
Makes 2 loaves or peach bread (peach bread doesn't sound so good, but tastes great!)
crumb topping for the peach bread:
1/2 c. flour
1/4 c. brown sugar
3 Tbsp. softened butter.
(mash together with a fork)
hot peaches
8 c. fresh peaches
1 c. sugar
3/4 tsp. sweet spice
1 c. water
4 tbls. ultra gel
heat and serve. It's yumo served with
special K cinnamon pecan cereal
flakes (crushed) over vanilla icecream .
peach smoothie
2 peaches peeled, cut and pitted
1 c. plain or vanilla yogurt
1 c. crushed ice
1/4 c. sugar
blend and serve
